“They’ve opened a poke bowl place next door.” During the last few years I don’t know how many times we have heard (or said) this phrase. And it is that this Hawaiian dish became so trendy that the places where it was served did not stop growing.
Now a firm Asian competitor has emerged, and more and more locals are betting on it, even those opened by chefs of international prestige such as Dabiz Muñoz from Madrid.
The chef is avant-garde in its purest form, and anyone who has visited his three-Michelin-star restaurant knows it well. It is gastronomic rock & roll, dynamism and desire, a lot of desire, something that permeates each of its dishes.
That’s why every time we see a new project with his stamp we get excited because everything he signs has his mark. He already did it with StreetXO and with its delivery the GoXO (which at Easter offered us some spectacular torrijas)and now wants to join the dumpling feverthe star product that we can find in new restaurants and that comes to replace the poké bowls trend that flooded the streets a few years ago.
RavioXO, the new Dabiz Muñoz restaurant
It lands in Madrid on May 16, inside El Corte Inglés de Castellana, to pay homage to Asian cuisine with dumplings as the protagonists. As explained by the gastronomy experts at Directo al Paladar, “the bet, reduced to eight different dishes, includes some of its successes such as rabbit and carrot, but also new creations such as marmitako nigiri dumpling”.
Dishes such as the Thai Galician-style octopus or the Basque country house with mole de noiva will arrive on the menu of a restaurant about which we hardly know more, only that the dining room will have an open kitchen.
Already in Madrid Fusión, the chef explained that RavioXO “is going to be a concept around dumplings and steamed ravioli, that 15 years after opening DiverXO it is a concept that has made a great impact and has transcended over the years”, as and as we see in his first promotional video of the restaurant:
While that moment arrives when we can go enjoy what’s new from the most rogue chef in Madrid, we still have his sauces (like the one from Aioli either the brave) and the rest of its restaurants.
