Südtirol, or South Tyrol, is a province of the Italian region of Trentino-Alto Adige, a privileged area in which the optimal weather conditions and the richness of the land make this region the true ‘apple paradise’, that have a different color, aroma, flavor and freshness.
And it is precisely there that Marlene apples are grown by the hands of the more than five thousand partners of the VOG Consortium, in the clean landscape of the Südtirol alpine area, which stretches between Italy and Austria.
An apple rich in water, mineral salts and vitamins, with the right degree of sugar, perfect both for a healthy and tasty snack, as well as for use in the preparation of dishes like these Apple juice popsicles.
Apple juice popsicles
INGREDIENTS
- 3 Granny Smith Marlene apples
- 3 Royal Gala Marlene apples
- 100g of water
- 50 g lemon juice
- 30 g of carob seed flour
- 40 g sugar
- 30 g dextrose
ELABORATION
We start by preparing a syrup, boiling the water with the sugar and dextrose, and let it cool for at least an hour.
We peel two Granny Smith apples and blend them, mixing them with 25 g of lemon juice. We filter the mixture very well with a cheesecloth, and repeat the operation with the two Royal Gala apples in a separate bowl.
Mix the carob seed flour with the sugar syrup and stir until all the lumps are dissolved. We divide this last combination into two equal parts, and each of them we mix with the juices extracted from the two varieties: half with the Royal Gala juice, and the other half with that of Granny Smith.
We cut the remaining apples into very thin slices and line the lolly molds with them —one single apple variety for each lolly— and fill each mold with the juice corresponding to the chosen apple variety. Finally, we place the wooden stick in the center of the mold, put it in the freezer and let it cool and solidify at -18 ° C for at least 12 hours.
Cooking notes: if we prefer a sweeter flavor, we can add a little more sugar at the indicated dose. And if we don’t have popsicle molds, we can use plastic cups, following the same procedure to fill them.
