The classic Lenten stew but with a twist
Vigil stew is a traditional Lent and Easter recipe that, unlike the more typical stews of our geography, is eaten with cod. However, over time, touches of seafood flavor have been added to complete it and make it one of the most delicious dishes at this time of year.
We will peel the prawns and reserve the tails for later. In a frying pan, heat a tablespoon of all the extra virgin olive oil to sauté the shrimp shells and heads for five minutes. Add the water and cook for 10 more minutes over medium heat. Strain this fumet with a fine mesh strainer and set aside. In a saucepan, heat the rest of the oil and sauté the onion chopped into very small pieces together with the carrot and the garlic cloves. We fry for 15 minutes. We add 60 grams of the total of the chickpeas and a small glass of the fumet. Pass the preparation through a blender or a food mill until you get a paste.
Add the rest of the chickpeas and the remaining fumet, the salt, the paprika, the bay leaf and the cumin and cook the whole mixture for half an hour over low heat. Add the cod in small pieces, the prawn tails and the washed spinach. Cook for 10 more minutes over low heat. Let stand for a few minutes and serve hot.
