Whole Roasted Baked Cauliflower with Spicy Yogurt Dressing – Very Easy Vegetarian Healthy Recipe

  • Large, tight cauliflower

  • Plain Greek yogurt (real, if possible)
    150 g
  • Hot sauce (harissa, gochujang, tabasco…)
    10 ml
  • Lemon

  • concentrated tomato paste
    fifteen ml
  • Sweet paprika 1/2 teaspoon
  • extra virgin olive oil
  • fresh parsley and/or cilantro
  • Salt

Preheat the oven to 220ºC with air, if you have it, or top and bottom heat. Gently wash the cauliflower, remove the largest leaves from the base and lightly cut the stem so that it can stand up straight. Place in a greased or lined with baking paper tray and paint the vegetable itself with a little oil; season to taste.

Bake about 40-45 minutes, lowering the temperature to 200ºC after the first 10 minutes. If it starts to get too brown, cover with aluminum foil. Meanwhile, in a bowl, mix the yogurt with the hot sauce (adjust to taste), the concentrated tomato, the paprika, a splash of oil, a little salt and pepper.

Whole Cauliflower Steps

Carefully remove the pan, sprinkle the cauliflower with the lemon juice and a little more oil, and cover with the yoghurt paste. Return to the oven and cook about 10-15 minutes more, until the cauliflower is at the desired point, according to size. To check the interior texture, go through with a sharp knife. Serve with chopped parsley.

If you are passionate about cauliflower, you will surely enjoy it as a main dish or the star of the menu, but you can also use it as protein side dish to your liking, whether vegetarian or animal.
