In Direct to the Palate We have another similar technique by cooking the cauliflower whole, but cooking it first to achieve a more tender and juicy texture on the inside. In this recipe, however, we skip that step, as noted by author Hetty McKinnon from whom we have adapted the idea. You just have to be careful that it doesn’t get too crispy on the outside, although we do want the vegetable to be lightly roasted. A little aluminum foil in time will prevent us from burning.

Preheat the oven to 220ºC with air, if you have it, or top and bottom heat. Gently wash the cauliflower, remove the largest leaves from the base and lightly cut the stem so that it can stand up straight. Place in a greased or lined with baking paper tray and paint the vegetable itself with a little oil; season to taste.
Bake about 40-45 minutes, lowering the temperature to 200ºC after the first 10 minutes. If it starts to get too brown, cover with aluminum foil. Meanwhile, in a bowl, mix the yogurt with the hot sauce (adjust to taste), the concentrated tomato, the paprika, a splash of oil, a little salt and pepper.
Carefully remove the pan, sprinkle the cauliflower with the lemon juice and a little more oil, and cover with the yoghurt paste. Return to the oven and cook about 10-15 minutes more, until the cauliflower is at the desired point, according to size. To check the interior texture, go through with a sharp knife. Serve with chopped parsley.
