Nadal’s soup of galets or escudella, is the usual first course of Christmas food in Spain, specifically in Catalonia. And although it is currently considered a winter soup because it is hot, it is cooked all year round. Vegetarian galet soup with amaranth
This recipe is a winter staple in Spain, as it is substantial and delicious. To do this, pour 500 g of natural seitan into a processor and beat until it is in small pieces. Stir in 1 teaspoon of Provencal herbs, 3 peeled garlic cloves, a pinch of salt, a pinch of black pepper, 3 tablespoons of amaranth, 2 eggs, 2 tablespoons of wheat flour until integrated (it should have a paste-like texture). Let stand for 20 minutes. Make balls with the pasta and take them to the oven at 180ºC for 20 minutes or until they are golden brown. Meanwhile, bring 2 l of vegetable broth to the heat and when it starts to boil, add 150 g of galets. Cook for 10 minutes and add 1 cup of cooked chickpeas and the seitan balls. Let it boil for another 10 minutes. Serve and enjoy.
Vegetarian galet soup with couscous
Another healthy galet soup alternative to enjoy at Christmas. Pour 500g of seitan into a food processor and beat until small pieces remain. Add 4 peeled garlic cloves, 1 teaspoon of Provencal herbs, 3 teaspoons of dried wakame seaweed, 3 tablespoons of couscous, 2 eggs, salt, pepper and 2 tablespoons of wheat flour until smooth. Let stand for 20 minutes. After time, form bite-sized balls and place on a baking sheet. Bake at 180 ° C for 20 minutes or until golden brown. Meanwhile, heat 4 l of vegetable broth and add 300 g of galets and let it boil for a couple of minutes. Add 400 g of cooked chickpeas and the seitan balls. Let cook for 20 minutes. Serve and enjoy.
