Now that it is easy to find in practically any supermarket, tofu is an ingredient to always keep in mind in the fridge to solve healthy dishes, rich in protein and very easy, not only for vegetarians or vegans. A very simple way to prepare it is scrambled, an alternative to the classic egg that we can give many uses.
It is true that the quality of tofu includes obtaining better or worse results, but the good thing about this preparation is that we can customize and enrich it in a thousand ways and on the go. With a base of any vegetable that surrounds us in the fridge, some spices and the extra flavor of nutritional yeast, we will achieve a very nutritious dish in half an hour. To give it more creaminess we just have to use a “cream” of vegetable cuisine, or simple coconut milk, depending on how we like the texture.
Drain the tofu and wrap on kitchen paper, leaving a weight on top, so that it releases more liquid. Wash and dry the desired vegetables and fresh grass; chop into small pieces. You can use other vegetables and in another proportion.
Heat a little oil in a non-stick frying pan and fry the chives with a pinch of salt. When i start to make transparent, add the rest of the vegetables, stir and add the spices to taste.
Sauté a few minutes before adding the tofu, crumbling it with your hands or mashing it first with a fork. Season with salt and pepper, add a little more spices and yeast, and cook stirring a few minutes. Add the vegetable drink and let everything hydrate a little.
Continue just a few few more minutes cooking over low heat adjusting the spices, fresh herbs and salt to taste.

Like an egg scramble, this vegan recipe it is very versatile to take at any time of the day. We can accompany it with some low-carbohydrate bread for breakfast or lunch, as a filling or in the form of toast, or complete the dish with a salad, cooked vegetables, hummus and crudités, etc. Fresh avocado goes very well, as well as crispy roasted chickpeas. If we are not vegan, a little fresh cheese would be another good addition.
