Tomato sauce and butter.  Easy, simple and delicious cooking recipe

Without in any way underestimating the virtues of our magnificent extra virgin olive oil, butter also deserves to regain its rightful place as a gastronomic and culinary wonder. Each product has its place, although we did not imagine that a simple buttered tomato sauce it could become one of our last favorite recipes.

The preparation is extremely simple and only requires leaving the ingredients in a saucepan in gentle cooking for just under an hour, with minimal work on our part. We can use natural tomatoes when we have a good quality product to take advantage of but, honestly, it is much more convenient to use canned vegetables.

Of course, as in so many simple recipes, the quality of the raw material will make the difference, so it is worth choosing a trustworthy canned tomato and good decent butter, without it being necessary to throw the house out the window. With basic pantry products you get a delicious sauce with a homemade flavor that will be a luxury in a multitude of dishes.

Arrange the canned tomato in a saucepan or in a pot wider than it is high, better if it has a thick bottom. It can be used chopped or whole, without skin, pouring all juices of cans.

Add the chopped butter. Add the peeled onion cut in half. whole peeled garlic and a tablespoon of concentrated tomato. Add a little salt (less if the butter is salty) and Light the fire at medium power.

Wait for the butter to melt completely, mixing gently. Bring to a boil, lower the heat and cook gently for a few 45-50 minutes. Stir occasionally and mash the tomatoes with the spatula or ladle.

Carefully remove the two onion halves and the garlic. Try and adjust salt. Cook a little longer if you prefer more reduced and concentrated.

With what to accompany the tomato and butter sauce

In the original source of this recipe, they recommend serving the tomato sauce with gnocchi, but it will be a good accompaniment to any pasta we like, and we will only have to top it with good grated cheese and garnish it with some oregano or basil. It is also a great sauce to take with Cuban rice, meat or vegetarian meatballs, or to accompany some homemade chips. It can be frozen without problems.
