And since it is best to trust those who know the most, we have resorted to the most prestigious of opinions: that of the experts at the Basque Culinary Center. The Faculty of Gastronomic Sciences has presented a list with 100 young talents under 30 who arrive stomping in gastronomy this 2022.
We not only find chefs, but also farmers, ranchers and fishermen (which make up 9% of the list), promoters and communicators (5%), creators of start-ups (7%) and researchers or technologists (11%). to give you some examples. Room directors, sommeliers and many professionals from the world of gastronomy who join together to enrich an increasingly important and diverse sector.
The best thing is that through this list we have discovered three restaurants in Madrid that are worth going to thanks to the chefs under 30 who have in their kitchens.
Clos (Alberto Palomino)
Although the Asturian businessman and sommelier Marcos Granda is in charge of the project, Alberto Palomino is the head chef at Clos. This exquisite restaurant with a Michelin star in which there is a relationship with the wine that permeates each dish.
Ether (Sergio Tofé)
