The garlic prawn croquette or the cod fritter, as well as the gazpacho with basil oil, could not be left behind. The finishing touch as main, already at the table, was in charge of a hake in meunière sauce with tapioca and trout roe.
As a sweet ending, perhaps not especially Spanish, but very refreshing for this time of year, a coconut foam with mint granita. All this well watered with red, white and sparkling wines —all Spanish— which, together with water, hydrated the heads of the Atlantic Alliance.

In the glass, José Pariente, a white from DO Rueda, and Viña Ardanza Reserva 2015, a classic from DOCa Rioja, in addition to Brut Juvé and Camps cava.
