A typical cake from this Orense council, which you have surely heard named after its famous carnivals.
You will see that it comes out of a very white color and with a delicate texture, all contributed by the egg whites. In addition, with its unmistakable cream flavor, this sweet halfway between a sponge cake and a bread, since its dough does not contain yeast, will conquer you at snack time to take with a coffee or why not, to accompany a shot of a good Galician pomace. The truth is that you feel like it at all times.
Start by reserving 50 g of sugar and preheating the oven to 200 degrees Whip the cream very cold with a mixer, making sure that it has more than 35% fat, until it is very firm. Save it for later.
With the whisk, beat the twelve egg whites at room temperature in a very large bowl. As we are beating, add the sugar little by little so that it is incorporated and continue until they form peaks. Reserve. Sift the flour and add it to the whites, mixing gently so they do not get off, since it will be what provides fluffiness to the bica.
Mix the whipped cream until we see it integrated into the dough. Arrange the dough in a rectangular metal mold about 35 x 25 centimeters and have high walls. In my case I have not greased it since I lined it with non-stick baking paper. If you do not have that type of mold you can cook it perfectly in a round one. Sprinkle the reserved sugar on top so that it forms a crust.
Bake for forty-five minutes at 180 degrees or until when punctured with a toothpick it comes out clean. Let it temper for a few minutes in the mold and transfer it to a rack to finish cooling before chopping and consuming, freezing, etc.
