Homemade sugar-free baking is complicated, at least when it comes to the more traditional recipes we associate with those old-fashioned sweets, like sponge cakes and cupcakes. Sugar not only sweetens, it also plays its physical-chemical role in the dough, so it is not as simple as eliminating it or replacing it with dates or any sweetener.
Some time ago we shared our recipe for healthier muffins by reducing the amount of sugar as much as possible without turning them into an inedible concoction, but today we come with the definitive version of this fluffy sweet without any added sugar.
The challenge was to achieve that texture fluffy and soft, sweet and tender, so typical of our traditional cupcakes. And we have verified that the erythritola completely non-caloric sweetener that is granulated, like sugar itself, works more than well in this type of recipe.
It should be noted that erythritol slightly less sweet than sugar, and that does not behave exactly the same as that one; it dissolves with more difficulty and tends to leave the dough somewhat drier. Sometimes it is mixed with other sweeteners such as sucralose or stevia to try to compensate for these characteristics, so we will have to to experience a little depending on the brand we use.
Needless to say, even though they don’t have added sugar, they are muffins with their fat, their refined flour and their confectionery soul, so they are not a healthy food, but rather occasional and moderate consumption. No matter how homemade and sugar-free they are.
Beat the eggs, preferably at room temperature, with the erythritol and the orange or lemon zest with a wire whisk, for several minutes, until smooth. fluffy cream and pale.
Add the milk and oil and beat a little more. Incorporate the sifted flour with the yeast and salt, and beat at low speed until you have a homogeneous mass without lumps. Cover and let stand while preheat the oven to 250ºC.
Distribute the dough in cupcake liners inside metal trays or directly in the holes of the mold. You can also use silicone, although they are better in a metal mold with non-stick paper.
Add if desired more erythritol on top and bake 5 minutes. Lower the temperature to 200ºC and continue baking until golden brown to your liking. Let cool slightly before unmolding and cooling on a wire rack.
