Today a dessert for those with a sweet tooth, this express caramel flan has the flavor of this delicious cream, very typical in Latin American countries, but with the classic touch of the egg custard of a lifetime. In this case, I wanted to try to make my own dulce de leche at home and since the amount that came out gave me for several jars and it is not a cream that is consumed every day, nothing better than incorporating it in this flan, the truth is that its I loved the taste.
I have prepared it in the pressure cooker, which greatly shortens the cooking time. Normally the flans, unless I want to make them individual in flaneritas, I always make them that way, because I make sure they are set in a very short time. If you don’t feel like doing it this way, you can prepare them in the classic way to the bain-marie in the oven, placing the flanera in a tray with water that reaches half its height and cooking it for approximately one hour at 190ºC.
In a small saucepan put the six tablespoons of sugar and the three of water and heat on fire without stirring until a dark caramel forms. Bathe the base of the flan and the sides with the caramel. Let cool.
Secondly heat in a saucepan milk, sugar and vanilla without boiling. Beat the yolks and the egg, add the dulce de leche. Mix it until it dissolves. Add the milk little by little to the previous mixture while stirring. Pour it into the flanera and close the lid.
In the pressure cooker add about six fingers of hot water, put a steaming rack or a metal lid so that the base of the flan does not touch the bottom of the pot. Put the flanera and count fifteen minutes since I reached the pressure. When time passes, separate the pot from the heat and let it lose pressure little by little. Let it temper and refrigerate in the fridge for a few hours before unmolding it or better overnight.
