The fool (“silly”, “crazy”) is a dessert typically British that elevates this format to the altars, perfect for cover with strawberries and that it only requires three or four ingredients.
An fruit fool consists of a cream or mixture in irregular layers of a fruit sauce with whipped cream, sometimes using English cream or more liquid custard. Although there are versions presenting this dessert in more differentiated layers and adding other ingredients, the magic of fool is in its simple rusticity and perfect imperfection. You just have to keep in mind that the sauce, syrup or strawberry compote needs cool down very well before to mix with the whipped cream, so we could leave it ready the day before in the fridge. Adjust the amount of sweetness to suit your palate, or pair the strawberries with raspberries or currants for another twist.
Wash and dry the strawberries without the tail, weighing about 220 g, and reserve a few whole pieces. Chop them and place in a saucepan with the lemon juice and sugar, heat over medium-low heat and let the sugar dissolve. Cook gently for 20-25 minutes while mashing with the fork.
Continue cooking, crushing them, until a kind of thick syrup or more liquid compote with pieces of fruit. Transfer to another container, let cool and chill in the fridge for at least two hours.
Mount very cold cream with electric rods or a robot until firm. Mix the cream with the cold strawberry syrup, reserving four or five tablespoons. Combine with enveloping movements without finishing homogenizing.
Divide the cream in four cups alternating teaspoons of the syrup set aside irregularly, adding bits of the reserved strawberries in the middle. Top with a piece of strawberry and reserve cold until serving.
