Because the fish that have been raised through aquaculture are very fresh specimens – in less than 24 hours, since they left the sea, they are already available in the fishmongers – and of the highest quality.

INGREDIENTS
- Corvina Raised from Our Seas
- Artichokes
- Tender garlic
- 1 red bell pepper
- Onion
- Garlic cloves
- Garlic paste
- Rice
ELABORATION
We cut the red pepper, the garlic cloves and the garlic cloves. Cut the onion into brunoise (small dice).
In a frying pan, add a drizzle of olive oil and a little salt, and fry the onion together with the garlic, red pepper, artichokes and garlic cloves.
Next we add the fried tomato, the rice, a little food coloring and the water and cook for 20 minutes.
Five minutes before finishing, we add the sea bass.
Let stand a few minutes and serve.

Four years ago the European Union made an amendment to the Regulation according to which it is established that aquaculture fish do not have to undergo a freezing process to be consumed in hotels and restaurants raw or semi-raw.
After several scientific studies carried out, as stated in the EU Health Regulations, the fish from Spanish aquaculture Crianza de Nuestro Mares have been declared free of anisakis, as their absence has been demonstrated thanks to the good practices of marine farming, and feeding.
