Today we bring for breakfast (or snack) a rich plum cake of banana and dates with all the energy incorporated within it. This would be provided by fruit, honey and nuts. In it, no one flavor predominates over another, but the set of ingredients forms a delicious combination. It is done very quickly, since all the ingredients are mixed at the same time, and you do not have to mount butter or egg whites.
The date that has been incorporated into this cake is a very energetic and ideal to regain strength after a physical or mental activity. It not only provides energy to the muscles but also to the brain and its consumption increases mental capacity and agility, this being a highly recommended product for students. So now you know this will be a great cake for our little schoolboys and for an adult snack after playing sports. Always as an occasional snack, of course.
We will start by preheating the oven to 170ºC with heat up and down or at 160ºC with turbo if you have it. Grease and sprinkle a 22 cm long plum cake mold with flour. While in a bowl or in the glass of a food processor add the flour, the butter softened at room temperature, the brown sugar, the honey and the lightly beaten eggs. Mix everything well to form a thick dough.
Peel the bananas and cut them into slices and with a pair of scissors cut the dates into small pieces. Add these two ingredients to the previous dough and beat with a wooden spoon or with the robot shovel. for two or three minutes until we see that the dough is a bit fluffy. Pass it to the mold.
Crush the walnuts in a plastic bag with a rolling pin, the very small pieces should not remain. Sprinkle them on the surface of the cake. Bake for an hour or until we see that when you stick a toothpick, it comes out clean. When it cools down a bit, unmold and let it cool completely on a wire rack.
With what to accompany the plum cake
This banana and date cake keeps perfectly wrapped in aluminum foil or kitchen film for three or four days. Being, as I had commented, ideal for provide energy from the morning until lunchtime. In a simple way, we incorporate many minerals into our diet such as magnesium, present in quantity in dates, very necessary for the proper functioning of our body.
