First cousin of other super recipes at the expense of squid —and its relatives— such as potatoes with cuttlefish or squid in American sauce, this great dish of squid with potatoes is the definitive excuse to get out of the Roman style squid.
Eye, we have nothing against them, but when you discover how easy it is to make this recipe and how tender the squids are (and the sauce they leave) you will be repeating it over and over again.
There is also no need to spend a lot of time or make too much effort, just buy a good squid, have some good sherry wine in the kitchen and, as on other occasions, crack the potatoes —as if they were Galician cachelos— to thicken the broth.

We clean and wash the squid if it was not. If not, we ask the fishmonger to remove the bag and the feather. At home it will suffice chop it into bite size.

Second course with enough substancesometimes it can be used as a single dish, although if we cannot resist the seafaring temptation of squid and cuttlefish in season, we can open our mouths with a grilled cuttlefish or some good squid tails.
