In a saucepan with two tablespoons of oil, we begin by sautéing all but the potatoes for 5 minutes. Then add the potatoes and cover with water, letting cook for 20 minutespreferably covered.
Meanwhile, we clean the fish to remove the skin and bones, reserving the clean pieces that we also cut into pieces similar in size to the potatoes. When we see that the vegetables are almost ready, taste and rectify salt and pepper and put the fish in the pan.
Let cook for five minutes, stirring slightly. We put out the fire and we already have the dish ready to take to the table. If the broth is too clear or if we like it more locked, we can take out some vegetables and blend them with the blenderreturning them to the saucepan and stirring until we see the broth to our liking.
We finished by putting a few sprigs of parsley and adding, optionally, a squeeze of lemon juice. We bring the casserole to the table immediately and serve to the diners, so that it arrives very hot.
