Avocado has become one of today’s hottest superfoods, and for good reason: Chefs around the world have found that, in addition to being one of the most perfect foods – it’s rich in vitamins, minerals, and healthy fats. – It has an excellent flavor and is ideal both for meals and for a snack between meals.
A very versatile product, since it practically combines with any dish, either as an ingredient or as a side dish. In fact, its uses in the are multiple, either to enjoy it in a simple way – adding just a little sugar or salt – or to make it the protagonist of exquisite and healthy preparations, like this Quinoa with avocado and battered prawns, a recipe offered by the WAO (World Avocado Organization).

INGREDIENTS
- 500 g quinoa
- 2 l of prawn broth
- 4 tablespoons of butter
- 1 onion, finely chopped
- 7 slices of bacon, finely chopped
- 1 cup of white wine
- 1 cup of liquid cream
- 1 cup of grated Parmesan cheese
- Salt and pepper
- 2 tablespoons olive oil
- 2 tablespoons basil, finely chopped
- 1 and 1⁄2 avocado, diced
- 250g large prawns, peeled
- 2 eggs
- Oil for frying
- 2 cups panko (Japanese equivalent of breadcrumbs, made from dry crumbs)
- Basil leaves
ELABORATION
We wash the quinoa well and put it in a pot with the boiling prawn broth. Cook for 12 minutes or see the grains loose. We strain and cool.
In a frying pan we heat the butter with the olive oil, add the chopped onion and bacon, and cook over low heat until the onion is transparent. We pour the white wine and the liquid cream, and once it is boiling, we add the quinoa. We cook until it has a smooth and creamy texture. Season and add the basil, avocado and cheese. We reserve the heat.
We pass the prawns through the egg and then through the panko, and we fry them in plenty of hot oil. We let them drain on absorbent paper.
At the time of serving, put a portion of quinoa in a deep plate, place the fried prawns around it and decorate with diced avocado and basil leaves.
