Mix, on the one hand, the flour with the salt and, on the other, the yeast and sugar with the warm water. After a few minutes, when the yeast begins to bubble, add your mixture to the flour and salt. We stir until we obtain a smooth dough.
Add the oil and mix until incorporated. We pass the dough to a floured table and knead for five minutes. During the process we sprinkle the table from time to time with a little flour or semolina, so that it does not stick too much, but always in small quantities.
We form a ball with the dough, we anoint our hands with oil and let some ferment three hours at room temperature in a container covered with a cloth. Then we pass it on a floured table and crush it with our fists to eliminate excess gas.
Divide into three balls and let them rest for 10 minutes, with this the dough relaxes and stretches more easily. Now it only remains to stretch, cover with the chosen ingredients and bake at the maximum temperature that the oven allows until crisp and golden.

Fish & chips
This plate of battered and fried fish With its side fries it is wildly popular in the UK and amongst street stalls and small specialty shops it is found on every corner. If you can’t try it on the spot, here is the recipe.

Ingredients for two people: 4 potatoes, 2 skinless white fish fillets (cod, hake or similar), 200 g of wheat flour, 3 tbsp of baking powder, 250 ml of cold beer, salt, ground black pepper and vegetable oil for frying.

Elaboration: preheat the oven to 180 ºC with heat up and down. We peel the potatoes and cut them into thick sticks. Cook in a saucepan with plenty of salty water for five minutes. We drain and place them on absorbent paper to dry well. Meanwhile we prepare the fish. Dry the cod fillets with absorbent paper and season them on both sides. We have to manage to remove the excess moisture from the fish, so that it is meaty. We mix the flour and the yeast in a deep and wide container. Add the beer and stir with a few rods until there are no lumps. We sprinkle each fish fillet with flour, on all sides, and dip them in the previous mixture, holding by the tail. We drain the excess dough and place them in a pan with plenty of hot oil. The ideal temperature is 190 ºC. Fry for two minutes on each side or until the batter is golden. We transfer to a plate with absorbent paper to remove the excess oil. We keep the fish warm in the oven while we fry the potatoes, in the same oil and pan that we used for the fish. When the potatoes are golden brown, we drain them, salt them and serve immediately together with the battered cod fillets.

Authentic nachos

Ingredients for one serving: 120 g of minced meat, 1 slice of Cheddar cheese, 2 slices of pickle, red onion, lettuce, mayonnaise, hamburger bun, salt and ground black pepper.

Elaboration: Divide the 120 g of minced meat into two 60 g balls, which you should shape gently by hand, without compressing the meat. Salt and pepper them generously. Now prepare the garnish: julienned onion, sliced pickles, well-cut lettuce, mayonnaise and the cheddar or American cheese. Put a large, flat skillet over high heat, add a little butter, and toast the hamburger buns, until they are golden brown. Arrange on a plate, spread with mayonnaise and, on one side, place the lettuce, onion and pickle. In the same pan, place the first ball of minced meat and mash it vigorously with the help of a spatula. You must press hard, so that the burger cooks very quickly. Flip when the edges start to crisp (if the heat is strong enough it won’t take much more than a minute). Put a slice of cheese. When it melts, remove the first hamburger and put it on the vegetables. Repeat the operation with the next hamburger. Cover the sandwich and serve immediately.

Ingredients for two units: 10 g of Dijon mustard, 2 individual ciabatta breads, 4 slices of cooked ham, 6 slices of roast pork loin, 4 slices of Swiss cheese, 3 large pickles and 10 g of room temperature butter.

Elaboration: Cut the loaves in half, lengthwise, and spread the inside of the lid with mustard. In the other halves of the bread we are placing the ingredients: the ham, the salami, the loin, the cheese and the pickle (previously sliced). It is important to respect the order of the ingredients. Chicken Yakitori

Ingredients for four units: 5 boneless skinless chicken thighs, 3 chives, 1 leek, 200 ml of soy sauce, 125 ml of mirin or rice wine, 125 ml of cooking sake, 20 g of brown sugar, sunflower oil and 8 skewers .

Elaboration: we cut the chicken into bite-size pieces. Cut the chives, first in the center lengthwise and then into pieces of about two or three centimeters. Skewer on skewers, alternating pieces of chicken and chives. We booked. We prepare the teriyaki sauce. We cut the leek into large pieces and put them in a pot together with the sake, the mirim, the soy sauce and the brown sugar. Cook over low heat until the sauce thickens and reduces by half.
