We crush the 200 g of raw almonds in the Thermomix, at speed 6 for 10 seconds. Add the sugar and mix at speed 6 for five seconds.
Separate the yolk from the egg white. We reserve the yolk to brush the panellets and beat the egg white slightly. Add four teaspoons of egg white to the Thermomix glass (about 20 grams). Mix again at speed 6 for 10 seconds.
Remove the dough from the glass and wrap it in plastic wrap. we let rest in the fridge for at least 12 hours.
We take small portions of dough and make balls. Brush part of them with egg yolk and coat in grated coconut. Coat the rest with pine nuts and chopped raw almonds before brushing with egg yolk. we can give shapes other than panelletsdepending on the finish.
Place the panellets on an oven tray covered with parchment paper and bake them in the oven, preheated to 180ºC with heat from above and below, for 12-14 minutes or until lightly browned.
