He bagnat bread It is a sandwich filled with vegetable and fish salad traditional from the French region of Nice. Originally it was a way of recovering stale bread by wetting it with water and accompanying it with tomato and salt to make it more juicy and edible.
Later this bread began to be incorporated into the popular Niçoise salad along with other ingredientsdepending on the season of the year: onion, green peppers, black olives, basil, anchovies, olive oil, etc. and served in a bowl rubbed with a clove of garlic.
The same combination of ingredients carried over to another container, the bread, resulting in what is now known as Pan Bagnat. My version is based on the British chef Gordon Ramsay’s way of preparing them, but using wholemeal bread, although nothing prevents you from preparing it with any other bread of your choice.
Cut the top of the bread horizontally and remove the crumb (we save it for other preparations or to make breadcrumbs). Cut the garlic clove in half and rub well. all inside of the bread so that it is impregnated with its flavor and aroma.
Boil the eggs in plenty of salted water for 12 minutes. We refresh them in ice water, peel them and cut them into slices. We also laminate the tomatoes, cucumber and spring onion. Cut the green pepper into thin strips. We drain the tuna.
We fill our bread with different layers, starting with the tomato, seasoned with salt and oil. We continue with the boiled egg, also with a little salt. And we continue with a layer of cucumber, another of chives and another of green pepper: We end up covering the whole with the tuna.
Prepare a traditional vinaigrette by beating the oil well with the sherry vinegar, salt and pepper until emulsify. Pour it over the filling, close with the bread lid and let it rest for a couple of minutes before portioning and serving.
