Although it is a very simple elaboration, explaining it in words is a bit complicated. But do not panic because today’s recipe is accompanied by a video, so that all clarinet remains and you can mark this omelette, mushroom and cheese sandwich for dinner tonight.
The truth is that the filling can be vary to taste. You can put ham, chorizo or other cold cuts, spinach, sliced tomatoes, grilled vegetables and endless ingredients. The only one we recommend keeping, yes or yes, is cheese. Provides a magnificent creaminess to the whole.
We start by cleaning the mushrooms, laminate them and sauté with a little extra virgin olive oil. We toast the slices of bread one-sided. We reserved both, mushrooms and slices.
We beat the eggs, add a pinch of salt and another of oregano. We heat a little oil in a nonstick skillet and add the beaten egg. We place the slices of bread on top, leaving the unroasted side on the surface. When the egg begins to set, we turn the omelette.
We arrange the mushrooms and the cheese slices on one of the halves of the tortilla, making it match the bread. We close the ends of the tortilla towards the center, covering the cheese. We finish by folding the sandwich in half and letting the cheese melt while the bread is toasted. We serve immediately.
