In Spain we tend to eat eggs for dinner, a food that, in almost the entire world, is the king of breakfast. In Mexico It is very typical to start the day with what is known as huevos rancheros, a very complete dish, but easy and quick to prepare, which I love to make for dinner.
The recipe It consists of fried eggs, a tomato and hot pepper sauce and, optionally, a base of beans and a touch of melted cheese: all on a corn tortilla.
For prepare the dish You just have to cook a tomato sauce with onion, pepper and jalapeños, if you like spicy. To assemble the dish, heat the tortilla and place the beans on it (they can be perfectly canned), the fried egg, the sauce and, on top if you like, cilantro and grated cheese.
