It’s getting cold and I have a crazy desire to make recipes with the oven. So in autumn and winter there is never a lack of cakes or cookies at home for a snack or breakfast, and if it also happens like when I prepare these molasses and spice cookies, that the whole house is flooded with a delicious aroma of ginger and cinnamon, you will understand why I cannot stop making them.
The molasses or cane honey It is obtained from sugar cane, it is ground on rollers that compress it strongly, in this way a liquid is obtained that is then heated until it is concentrated by evaporation. The final product has a texture similar to honey and a very pleasant taste that reminds many people of licorice. Nowadays it is already easy to find it in our usual supermarkets, in the area of honey or jams, but in Latin American product stores you will surely also get it.
We will start by preparing some baking trays with baking paper. Next we mix the white and brown sugar and beat them with the butter until they are creamy. At this time we add the egg and incorporate it into the previous preparation, when we see it integrated we add the cane honey. We combine all the ingredients well.
In another bowl we sift the flour and add the bicarbonate, cinnamon, nutmeg and ground ginger. We pour the dry ingredients over the wet ones and we knead until we have a soft dough but does not stick to us to the fingers. Depending on the type of flour, we may need more or less quantity according to its absorption capacity. We let it rest for half an hour in the fridge covered with kitchen film.
We preheat our oven to 170ºC. We stretch the dough between baking papers at the same height and we cut our cookies with a glass or a special cutter. We are placing them separately on the oven plates and we cook them during 15-20 minutes approximately, until we see them slightly golden. We let them cool on a rack.
