Thousands of menus of the day cannot be wrong. Companion to the menu of dishes such as gazpacho, salmorejo, asparagus with mayonnaise or Castilian soup, the mixed salad has been a home and hotel reference for many Spaniards.
It is true that each one has their trick and in each house it is done in a different way, but this is our interpretation where, in addition, we are going to advise you that do not settle for just adding the oil and vinegar in the traditional way.
With a simple gesture you can have a premium vinaigrette that will bathe your mixed salad at will, which, as its name indicates, can be a mixture of whatever you want. To taste you can remove or put the ingredients that convince you or not, but do not stop doing it, which is a classic that should not fall into oblivion.
Among our favorite ingredients are carrot and asparagus use, but also the fundamental participation of olives. What we do ask of you, as in any recipe and especially in the simplest ones, is that the ingredients be the best possible because the result will thank you.
The first step is to make the vinaigrette, where we mix three parts of oil with one of vinegar and a pinch of salt in a jar that we can close and then we shake with energy until emulsified.
Then, cook the egg —if it wasn’t already cooked— in plenty of boiling water for 10 minutes and then cool it in ice water. Peel and cut into slices. We also cut the spring onion into rings and grate the carrot if it is not grated.
In the bowl that we are going to serve the salad dress the salad with part of the vinaigrette and then add the hard-boiled egg, the sweet corn, the drained asparagus, the ventresca in pieces and also drained, the grated carrot, the olives, the spring onion and dress with the rest of the vinaigrette, trying to that everything is well seasoned.

With what to accompany the mixed salad
There is no table that a mixed salad cannot dress or where it does not serve as advance for first and second courses. By boat we could soon think of a Valencian paella, a black rice or some other dish that oozes summer like squid in its ink or even with the always handy potato omelette.
