The famous cloud bread or cloud bread has gone around the networks many times and is always a good resource to prepare at home when we are looking for something rich in protein and hardly any carbohydrates to complement our diet, whether ketogenic or not. It can also be versioned in variants like these mini keto pizzas, to take them with what we like the most according to our needs.

We have adapted this recipe following the same simple system: bake a dough prepared with beaten egg yolks with cream cheese and egg whites whipped apart almost to the point of snow. By dividing it into small portions and letting them flatten more when they come out of the oven, we have a base with which to assemble our protein pizzas to taste; obviously the dough is not crispybut it is a very nutritious snack and great for a low-carb dinner.

If you want it to be firmer you can pass them by the iron before serving so that they brown a little more on the bottom, and the toppings they can be changed to taste with the ingredients that best suit your diet. When choosing cheese, make sure it is 100% authentic and not mixtures based on starches and cream.

Preheat the oven to 170ºC with heat up and down; Line one large or two medium-sized trays with non-stick baking paper and lightly grease with oil, using a brush or spray. Let the cream cheese cool down a bit out of the fridge.

Pull apart the yolks of the whites of the eggs carefully; It is not advisable to use the shells themselves for food safety reasons, but if it is done, it is better to wash the eggs well right at that moment or disinfect them.

Whip the egg whites almost to the point of snow, until they form soft peaks, and then beat the yolks with the cheese and a pinch of salt until you obtain a creamy homogeneous mass. Start adding the egg whites, incorporating them with a spatula with encircling movements.

Do this little by little until you get a homogeneous fluffy mixture. Spread the dough on the tray forming 5-6 rounded mounds, flattening them slightly, as thick discs and separated.

Bake 5-6 minutes and remove; They will have inflated but when they cool down a bit they will go down. Then cover with the tomato or tomato sauce without sugar and plenty of cheese to taste. Bake again until the cheese melts and finish crowning with chicken or turkey, tuna… and oregano to taste.
