If you thought that in Mexico all the dishes that go between ‘breads’ they have to be only with corn flour tortillas or wheat flour tortillas we have good news to verify that not only tacos, chalupas, quesadillas, enchiladas, fajitas or chimichangas are fed there.
Also, although with a point that sounds very common to us, they feed on Mexican cakes, which despite their name they have nothing to do with a dessert or a sweet dishbut they are especially popular snacks in Mexico City.
Although it is usual that they are seen in all kinds of breadsincluding loaves of bread for sandwiches or hamburger buns, the most purist version is the one made following European breads, whether they are French, a Vienna loaf or, as is also very common, with telera breads as we would see in Spain .
There are dozens of different Mexican cakes, among which we find some very famous ones such as the torta al pastor (with the same ingredients as the tacos al pastor), the Cuban cake, the drowned cake, the marinated leg cake or the macaw cake or even the cochinita pibil cake. Ingredients that, as you will see, also allow for a lot of roast meat, a lot of ham, a lot of chicken or a lot of cheese in some of these recipes that even border on gourmet.
We cut the two leaves of lettuce into julienne strips and salt the chicken fillet and pass them through beaten egg and breadcrumbs to coat it and fry it in oil at 180 ºC.

We cover and squeeze We wrap two turns tightly in albal paper to be able to cut it in half without dismantling it.
