We have it all year round in markets and greengrocers, but it is at the end of spring and during the summer when zucchini is most enjoyed. One of my favorite vegetables that I usually include in all kinds of recipes, because in addition to tasty, cheap and healthyis versatile like few others.
My most recent discovery are these Mediterranean-style grilled zucchini They are very easy to prepare and do not require unusual ingredients. After draining them so that they release as much water as possible, we grill them with a little balsamic vinegar, which gives them a point of delicious flavor.
We finished off the job with a Greek yogurt sauce and feta cheese, seasoned with lemon, mint, garlic, salt and black pepper. Refreshing and perfect to accompany courgettes in the Mediterranean style. So rich that I would eat it by the spoonful. What are you waiting for to prepare them?
Wash the zucchini well and cut them in half, lengthwise. We make shallow cuts in the shape of a cross all over the surface, sprinkle them with a little salt and let them rest for half an hour.
Dry the zucchini with absorbent paper and mark them on a hot grill, griddle or skillet, on the cut side, for five minutes. Add the balsamic vinegar and the chicken broth and let it keep on browning for another five minutes. Finally we turn them over, cover them and cook them for a couple more minutes.
While the zucchini cook we prepare the sauce mixing the yogurt with the crumbled feta cheese, a little lemon zest, the chopped mint leaves, salt and black pepper. We serve the zucchini on a bed of sauce.
