Mix the sriracha sauce (amount to taste depending on the desired spiciness) and the tomato sauce. We remove and reserve.
Hydrate a rice wafer in a dish with cold water and place it on the work table. In the center we place a teaspoon of the previous sauce, another of yogurt, a meatball of minced meat, salt, ground black pepper and some spinach leaves.
Fold the ends over the filling and then wrap to close the roll. We repeat this operation as many times as necessary until we finish with the wafers or with the filling.
Place the rolls in the basket of the air fryer, on parchment paper so that they do not stick to the base and brush them with a little olive oil. We program 12 minutes at 180ºC. We serve sprinkled with sesame seeds and a little soy sauce.
