    It’s so easy to make this recipe, it’s hard to believe how rich it is. The Leek and shrimp quiche is the easiest recipe that you can prepare to enjoy with the starters at the next family gatherings.

    In less than half an hour, you will have this vegetable and seafood tart ready, which you can serve hot, warm or even cold, since you will like it at any temperature. Also it reheats very well with a microwave blow, or taking advantage of another cooking that you are doing in the ovenso you can have it cooked in advance.

    The good thing is that this recipe has many possibilities since it is worth cooking many variations, simply changing the ingredientsadding bacon, mushrooms, other vegetables, depending on what you have in the pantry.

    We spread the shortcrust dough in a buttered mold and prick it so that it does not rise in the oven. Cover with baking paper and stones or legumes and bake it for 10 minutes at 180ºC. While, Chop the leeks and the onion and fry them slowly until they reduce to a third of their volume and begin to toast.

    Lightly fry the shrimp tails until they change color. We beat the liquid cream with the grated cheese and the eggs. Add the well-drained prawns and the well-poached leek. Mix well until you get a dough with well distributed ingredients.

    Pour the mixture into the shortcrust pastry base that we will have taken out of the oven and emptied of stones and paper and put back in the oven for 30 minutes, checking with a skewer that it is sufficiently curdled and that the surface has browned slightly. We can serve hot, at room temperature or cold, according to taste.
