If you have visited the United Kingdom and you like its street food, it is more than likely that you know its typical jacket potatoes. These stuffed potatoes are one of the most popular recipes in the country and it is not surprising, as they are an inexpensive, filling and delicious snack.
One of the most popular fillers is tuna, corn and mayonnaise, which is the one we used in our recipe today and completed with grated cheese and chives. You can adapt the sham to your liking by varying the amounts of these ingredients or even omitting some of them or including some more.

We wash the potatoes very well (we are going to eat the skin), dry them and smear them with oil. We put them in the oven, preheated to 220 ºC with heat up and down, and we program 30 minutes. We turn and schedule 45 more minutes.
In the meantime we drain tuna and corn, add the mayonnaise and mix well. We grate the cheddar cheese and chop the chives. We booked.
When the potatoes are tender inside and the skin is crispy, we take them out of the oven. With care not to burn ourselves we make a cross cut on the surface of each potato. We press the ends from the bottom up to open the potato for the cut.
Season and introduce half of the butter in each potato, will melt with the heat. We distribute the filling, sprinkle with the grated cheese (which will also melt) and decorate with the chopped chives. We serve immediately.
