It costs a lot for Jordi Cruz to say that something is delicious. That’s why, when we saw his face when he tried María Lo’s salted caramel and bacon biscuit and said it was “very beastly” in a good way, we knew we had to try it. here is the recipe to make it at home, step by step and as true experts.
Mix the egg and sugar, adding the zest of half a lime and a pinch of salt. In another bowl, combine the two flours and the sifted yeast, adding this mixture to the previous dough. When they are well incorporated we add melted butter and fat of bacon.
Put the dough in a pastry bag and line the cake mold with butter and flour. Then fill the mold halfway with the dough and bake it for 15 or 20 minutes at 180ºc.
In the meantime we prepare the salted caramel with bacon fat. To do this, we caramelize sugar in a pot, waiting for it to reach that characteristic color and stirring non-stop while adding cubes of butter. Once integrated, we remove it from the heat and salt it to taste, cooling it and reserving it in a pastry bag.

The cake is already prepared. But we still have to cook the sauce that will give it even more juiciness. The contestant mixed sugar and water to create a syrup. When all the sugar had dissolved, she added berries and a splash of lime juice, cooking it all together to create a syrup.
