In general, we will start from a cooked riceeither round or elongated. In this case I have used 400 g of long jasmine or basmati rice, although Asian rice can also be Japanese short rice and other round and non-long varieties. Once the rice is cooked and stored in the fridge -it can be from the day before- it is advisable to take it out and air it a bit, stirring with a palette or shamoji so that it does not clump together and become loose again.
To make this rice, I like to go preparing each of the ingredients separately-without cooking them completely as they will all be done together later- in a mixture of sunflower oil and sesame oil.
We chop and sauté the chicken into bite-size pieces, cleaning the shrimp tails and removing the intestine to later grill them, beating the egg to make a one-egg French omelette and sautéing the different vegetables.
In addition to the ingredients used, you could also add ginger, onion, small canned corn cobs, sprouts, bamboo and other vegetables that you have in the fridge and want to incorporate into the mix. When we have all the precooked ingredients, we mix them in the wok and add the rice and soy sauce, always sautéing the mixture with a very strong fire so that we do not overdo the rice, but rather that all the ingredients are heated, mixing the different flavors.
By the end we decorate the plate with notes of green color, which in my case have been a few coriander leaves and some cooked and sautéed peas separately, which we have distributed over the surface of the plate. We take it to the table immediately to taste this rice at the perfect temperature.
