Gnocchi are a type of Italian pasta which are made from potato, flour and egg. Normally they are usually prepared scrambled or sautéed, with any sauce to taste, but they are much more versatile.
This version of the potato omelette made with gnocchi is a very simple recipe and with few ingredients in which you will only need: a package of gnocchi, purple onion, eggs and extra virgin olive oil. Another important factor is the panif we have one with a good non-stick coating, the job will be much easier to prevent it from sticking.

Peel the red onion and cut into julienne strips. Then brown in the pan for a few minutes with a few drops of olive oil until it takes on color. Reserve.
Meanwhile, to cook the gnocchi, we are going to put a large pot over high heat with hot water. When the water starts to boil, add a pinch of salt. When the water comes to a boil again, add the gnocchi to the pot. You will see how at first the gnocchi go to the bottom of the pot. But after a few minutes, the gnocchi will start to float and rise to the surface. This means that the gnocchi is already cooked, so they are ready to be removed with a slotted spoon. Reserve.
In a wide bowl beat the eggs and season to taste with salt and pepper. Once they are beaten and aerated, add the red onion and the already cooked gnocchi. Heat the pan where the tortilla will be made. When it is hot, paint the bottom and edges with a few tablespoons of oil. Mix well so that the pasta is impregnated with the egg and then take everything to the pan.
Now you have to continue with the procedure for the classic potato omelette, leaving it on medium heat for about three minutes on one side until it sets. Flip the tortilla with a plate and curdle the other side of the tortilla another couple of minutes, removing it to the plate where we are going to serve it.

With what to accompany the gnocchi omelette
A good green leafy salad is a good accompaniment to this gnocchi omelette. We can also serve it with mashed avocado, roasted cherry tomatoes and glazed carrots and radishes, or opt for a bowl of pea hummus with seed crackers as a starter before the main course.
