Today we are going to prepare some garlic prawns with an extra touch of flavor, to enjoy this classic dish or portion of a beach bar or restaurant on the coast, without leaving your wallet in the effort. At this time of year, the price of prawns tends to skyrocket, so today we make this version of the traditional recipe, but with prawns.
There is no doubt that shellfish is a star product that we enjoy in a big way on special occasions, but we do not always have to resort to the best white prawns from Huelva or the exquisite red prawns from the Mediterranean -Palamós, Denia, La Garrucha, Motril – when we want to taste a dish as tasty as this one.
The prawns usually maintain a stable price throughout the year and now, even approaching the Christmas dates, it can be found of very good quality and at the same price. It’s even a good option to buy them frozen to take out when the time comes.
We begin by peeling the prawns, reserving their heads, and removing the intestine or black thread from the tail. Chop two garlic cloves into not very fine slices. In a clay pot, we put the extra virgin olive oil and garlic, adding a piece of dried chilli or cayenne.
As soon as the garlic starts to dance, we add the shrimp tails lightly seasoned with salt, distributing them all over the surface. Lower the heat and turn the prawns, letting them cook for a couple of minutes or three, for each side.
We put the shrimp heads in a saucepan, add a good splash of extra virgin olive oil and fry over high heat. With the mortar mallet we press the heads so that they release their juices. Let the oil infuse which we then strain and pour over the garlic prawns.
We bring the garlic prawns to the table after sprinkling a little chopped parsley and well provided with bread so that everyone can also enjoy the flavor of the oil with garlic, chilli and essence of shrimp headsan intense and unforgettable sauce.
