The Governor taco is one of the most popular snacks in the Sinaloa State, on the coast of the Gulf of California. There is no single recipe: the denomination is used to designate all kinds of shrimp tacos, as shrimp and prawns are called in Mexico, to which cheese is always added and, normally, onion, chilies and tomato. In addition, the ingredients are usually cooked, and often the tortillas, in Butterso it is a tender taco, which almost looks like a quesadilla.
The official history of the taco, which many question, tells that in 1990 the then governor of Sinaloa, Francisco Labastida Ochoavisited Los Arcos Restaurant and its owner, Eduardo Armando Angulo SolomonHe wanted to surprise him. She knew of the governor’s taste for shrimp and he created a taco with shrimp, melted cheese and poblano pepper, among other ingredients. When the governor, excited, wanted to know the name of the dish, the chef replied: “governor taco”.
The recipe that we are going to make today appears in the book México Gastronomía, by Margarita Carrilla Arronde, a Mexican television cook who compiled in this enormous volume the most traditional recipes of the country. In the book there are complex elaborations and with ingredients that are difficult to find in Spain. This is not the case: when it comes to these tacos there is no difficulty.
The first thing we are going to do is heat 25 g of butter in a large saucepan or frying pan. Then add the peeled, seeded and finely chopped tomatoes and half an onion, also finely chopped.
Saute the vegetables over medium heat until a thick sauce remains. We then add the raw peeled prawnsseason with salt and pepper and add two tablespoons of chopped cilantro. Let the prawns cook for two minutes, turn off the heat and add the soft white cheese that we like the most, grated.
Once the filling is done, heat the tortillas in a pan without using oil until they soften. If we have guests, we can serve the filling and the tacos separately, but usually these tacos are filled and fry a few more minutes in a pan with butter.

How do you see this recipe? nothing spicy, this is usually served separately so that each one can lie down to their liking, something very common in Mexico.
