We will start preparing the base, for that, we crush the cookies and add the melted butter. We mix evenly. we prepare a square mold of 15 by 15 centimeters and flatten the dough with a spatula in the bottom of the mold. We reserve in the fridge.
we put to hydrate the gelatin sheets with cold water. On the other hand, in a bowl, beat the cream cheese at room temperature, add the Lotus spread and beat with an electric whisk until the ingredients are mixed.
Add the vanilla extract, mix, add the lemon juice, stir. Add the drained and melted gelatin a few seconds in the microwave.
On the other hand, we whip the cream together with the sugar until it is foamy, it cannot be completely whipped and we add it to the previous mixture. Stir with a whisk and add the Lotus cookies crushed in a mortar. There should be some bits left that will make the biscuit mousse crunchy.
Pour the mousse into the mold on top of the base, spread it well and smooth the surface with a spatula. We placed six Lotus cookies. We put five hours to gel in the fridge and one hour in the freezer.
To unmold, we put around the mold a warm cloth surrounding it for a few minutes, and lift the mold upwards when we see that the mousse begins to come off the walls. We cut with a sharp knife six rectangular cakes.
