In this case, 20 minutes will be enough to have them ready and, if you accept a piece of advice, it is better that they be large artichokes because they will have more meat, although remember that the quality of an artichoke it is measured by its solid character, not its weight.
Also, to taste, you can tweak the recipe adding, for example, a little cheese to melt at the end or making a garlic and parsley sauce. It also goes well with a little Iberian ham in slices or tacos, a little piece of grilled foie and even a fried egg.
Peel the artichokes until reaching the tender part and remove any hair that may have. When they are very clean, we cook them in abundance water with salt and parsley for 10 minutes on medium heat.
When they are cooked, we take out and drain well, avoiding bringing water to the griddle. We open the petals so that the artichoke is wide open and flat.
Heat a tablespoon of oil on the griddle or in a non-stick frying pan. until it is very hotwe add the artichokes and cook just a minute or two, just enough to mark them on both sides and off the heat we salt them with the maldon salt.
