Betting on mussels is always a good idea, practically at any time and at any time of the year. Cheap and healthy, we usually have them as an aperitif but there are recipes that deserve to be claimed when we want have a good dinner at home without complications life.
That is why mussels with mustard cream are a great option to prepare any day of the week and end the day with a really tasty dish, very quick to prepare and different from the typical dinners that we all tend to repeat when life overwhelms us and we don’t feel like or have the strength to get creative.
We will only have to spend a little more time cleaning the mussels, a task that is easier the more practice you have. Afterwards, a simple well-chopped onion sauté with Jerez will be the base for cooking the mollusk; this task will be ready in a few minutes if we use the express cooker or the programmable onealthough in the traditional method we will not need much more time either.
With the mussels open, we take them out and separate one of their shells before finish the sauce with the strained cooking water, a little cornstarch, liquid cream or evaporated milk, mustard and a pinch of saffron. Instead we can use curry or ras el hanout, to give it a more exotic and spicy touch.

To complete this dish we will only need good homemade bread to dip or a little white rice in the microwave, which practically cooks itself.
