We start by preparing the sauce. Put a frying pan on the fire and we heat the sunflower oil in it which we will then pour over the other ingredients. In a bowl, put the chilli or chilli flakes, the sesame oil, the Asian fish sauce, the rice vinegar, the lime zest, the chopped cilantro, the chopped garlic clove and a piece of spring onion, also finely chopped. .
Add the lime juice, the chili paste, the grated ginger and the finely chopped spring onion. Mix the ingredients and pour over the very hot sunflower oil. We mix vigorously with some rods so that the ingredients are cooked in that reverse frying process.
Cook the noodles in the way indicated by the manufacturer. It will take about three minutes after immersing them in boiling water. Remove the noodles and transfer them to the bowl where we have the sauce and mix well.
