It is, therefore, the region known as Marco de Jerez, cradle of these wines, the place of origin of Sherry vinegar that, like Sherry wines, is aged following the traditional system of criaderas and solera, a genuine and prolonged aging that sometimes exceeds ten or twenty years and that explains the richness and high concentration that characterize this product.

Cauliflower mozarabic dressing with dates
INGREDIENTS
For 4 people
- ½ teaspoon curry
- ½ teaspoon of cumin
- ½ teaspoon sweet paprika
- ½ teaspoon ground cinnamon
- 1 cauliflower
- 1 spring onion
- 100 g of dates
- 1 red bell pepper
- 1 green bell pepper
- Peppermint
- Salt
- 100 ml of extra virgin olive oil
- 25 ml of sherry vinegar with muscatel
ELABORATION
First of all, in a saucepan with salted water, boil the cauliflower, cut into bunches, for three minutes. When it is, we take it out, put it in ice water and reserve.
To prepare the dressing, we mix the 100 ml of extra virgin olive oil, ½ teaspoon of curry, ½ teaspoon of cumin, ½ teaspoon of sweet paprika, ½ teaspoon of ground cinnamon, and the 25 ml of Reserve Jerez vinegar. We beat well and reserve.
On the other hand, we chop 1 spring onion, 1 green and 1 red pepper, 100 grams of dates, and a bunch of mint.
In a bowl or salad bowl we place the cooked cauliflower bouquets, add the previous chopped, put everything to the point of salt and, finally, add the dressing. We mix and serve.
