Each area of our country uses this fish in a particular way and this traditional cod recipe from Catalonia It is perfect for this time of year, since the combination of flavors and textures is very pleasant.
There are some variations on this recipe, such as adding chopped hard-boiled eggs, fresh or cooked spinach to the sauce or even chopped olives. The one we are telling you about is the basic preparation, to which each family gives their personal touch.
As previous preparations, Chop the onion in brunoise, chop one of the garlic cloves, grate the tomato to collect its pulp and toast some pine nuts so that they are golden. Meanwhile, we rehydrate some raisins by immersing them in warm water for 15 minutes.
Sauté the onion, the very chopped garlic and when they are soft add the grated tomato and pine nuts, as well as the sultanas. We mix everything well. Add the glass of wine or cognac and let it evaporate over high heat. On the other hand, flour the fresh cod loins -or desalted in this way- and lightly fry them in a pan with olive oil, flavored with the other clove of garlic that we brown and remove.
After frying the loins, we add the fish so that it finishes cooking in the casserole where we have all the sauce, we add a glass and a half of fish broth and let everything cook together for 10 minutes, always over low heat.
We serve the cod fillets, covered by the sauce with their chunks, bringing everything very hot to the table so that diners can enjoy it at its point of temperature. We bring a good bread to enjoy the sauce.
