We introduce the soletilla cakes in a large bowl and rub them with our hands until they become fine crumbs. Add half the cream cheese, the strawberry jam and 1/4 teaspoon of the red food coloring. We stir well to incorporate all the ingredients and obtain a homogeneous dough.

Line a small bowl with plastic wrap and set aside. If we have one of Oval shaped, better than better. If this is not the case, we can manage with a round one. Fill with the sponge cake dough and reserve in the fridge.

Mix the cream cheese with the icing sugar and a little pink food coloring, stirring well until it has a homogeneous color. We introduce in a pastry bag with round nozzle. If we are going to serve the cake immediately, we will decorate it. If this is not the case, we keep in the fridge.

We unmold the cake and with the help of our hands we flatten a little on the sides to give a more realistic shape to the brain. With the help of a skewer or the blunt side of a knife we mark the separation of the hemispheres.

Very carefully we decorate the entire surface with the cream cheese, making the characteristic shapes of the brain. Finally, we fill the largest gaps and gaps with strawberry syrup, using a kitchen bottle or a brush to avoid distorting the decoration.
