The sweet potato is one of those foods that we can find almost all year round, but that remains a typically autumn product. It is also in the cold months when you most want to cook it in the simplest way, oven roast, as simple as it is delicious. You only need one ingredient, the tuber itself, then admitting everything you want.
The ideal would be to be able to prepare it in a stone oven, over coals or with the wood of a fire in which to roast chestnuts, but any domestic oven it will serve us for this task. The amount of sweet potato or sweet potato that we roast will depend on how many of us are at home, what we are going to use it for or how much we like it. Although, as we get, we recommend taking advantage and always roast a little more.
If the oven fails or you cannot use it, remember that this vegetable can also be cooked in the microwave, with the toaster or even a slow cooker, in addition to cook it or sauté it directly in the pan.
Preheat the oven to 200ºC with air or 220ºC with heat up and down. Line a tray or platter Refractory with parchment paper or aluminum foil, or lightly grease with oil if preferred.
Wash the sweet potatoes very well with water, rubbing thoroughly the skin to remove dirt debris; They are usually sold already washed but it is not a bad thing to brush them with a special tuber brush, especially if they have been bought at a farmers’ market. Dry well.
Prick all over its surface with a fork simply to pierce the skin and place separately on the tray. Bake at medium height for about 45-55 minutes, depending on size. The skin should be crisp and somewhat toasted, with the pulp very tender, and some juices will have come out. They do not need to be turned over.

Those of us who remember the smell of roasted sweet potato linked to childhood memories in the grandparents’ house we enjoy the freshly made sweet potato simply with a spoon, although we can enrich it with good Butter, letting it melt slowly with the heat, or extra virgin olive oil and a little salt. To give it a sweet touch it is not a bad idea to sprinkle it with ground cinnamon and a little honey or brown sugar. Its roast meat can be used to make a cream or puree, to make cakes or breads and sweets such as panellets, pancakes or cookies, as we would do with pumpkin.
