In this case it is a vegetarian recipe, but to which we can add a few pieces of chicken, Serrano ham or even tuna, to convert it to the taste of the most carnivorous. On this occasion, I have used the raf tomato variety, but I have prepared it on other occasions with beefsteak tomato and it was also delicious. The idea is to look for a good-sized and fleshy tomato, which allows us space for the filling.
We will begin cutting off the tops of the tomatoes. We booked. With a teaspoon we are emptying its interior. Cut the cherry tomatoes in quarters. Next, we chop the peppers of two colors as well as the courgette into fine pieces. We clean and divide the mushrooms, and cut them into quarters.
Subsequently preheat the oven to 185 degrees. We place the empty tomatoes in a refractory source spread with a tablespoon of extra virgin olive oil.
For the filling, mix the cherry tomatoes, the pieces of pepper, the chopped mushrooms and the diced zucchini in a bowl. We also add the pine nutsAdd the olive oil to the mixture and season with salt and pepper.
Fill the tomatoes with this mixture. We also have on the tray the tops of the tomatoes that we had reserved, add two tablespoons of olive oil on top and we bake for half an hour.
