September is still summer, and while it’s hot you still want easy and light recipes like this melon, cucumber and feta cheese tartare, which solves a dinner or light meal in 10 minutes.
We have borrowed the recipe from our French cousins, the 750g website, where they make it, of course, with cantaloupe melontypical of France.
This melon is perfect for this recipe, because better contrast with the flavor and color of cucumber, but if you can’t find it, you can always make it with a conventional melon, it’s also delicious.
Wash the cucumber. You may or may not peel it depending on how tough the skin is, but you don’t have to. Cut the ends, then lengthwise into quarters. Remove the seeds and cut it into small cubes. Reserve them in a large bowl, where we are going to mount all the tartar.
Peel and core half a melon. Cut it into cubes of the same size than cucumber. Add it next to the cucumber. Cut the feta cheese into cubes the same size as the cucumber and melon, and mix it with the rest of the ingredients. Add a handful of chopped fresh mint.
Just left salad dressingwith a little lime juice, olive oil, salt and freshly ground black pepper to taste.
You can present the tartar in the same bowl or, as we have done, plate it individually helping you with a hoop to make it pretty.

This tartar is perfect for a light lunch or dinner, but can also be served as part of a healthy snackaccompanied, for example, by a tabbouleh or some grilled vegetables.
